Victoria’s Penne Alla Vodka

My love for vodka sauce runs deep. I’m pretty sure there was a full year in my 20s when I ate vodka sauce daily.

My hunt for the perfect vodka sauce has finally been put to an end. Yes, this is my recipe. I have googled recipes high and low. I took all my favorite aspects of a bunch and came up with the this.

I love it so much because it’s not too heavy, not too cheesy, of course super simple, and so tasty.

It’s vodka sauce perfection.

Victoria’s Penne Alla Vodka

2 cans crushed tomatoes

1 stick salted butter

1 onion finely diced

1/4 cup vodka

1/4 cup white wine

1/2 cup grated Parmesan cheese

16 oz  heavy cream

Fresh basil – a good handful

Salt

Black pepper

Red pepper

Directions

Put half stick of butter in pot till melted and add diced onions. Salt through the onion to help them sweat. Sauté on low for 7-10 minutes. Once the onions are soft and see through, add the 2 cans of tomatoes.

Add red & black pepper and salt. Bring to a boil.

Add wine and vodka. (This is the perfect time to start your salted pasta water). Once it is boiling, lower to a simmer and let cook 20 minutes.

Add in the rest of the butter till melted.

Now, stir in the heavy cream and Parmesan cheese. Cook on low for 8 minutes.

Add basil, cook for 2 minutes.

Spoon over your favorite pasta.

Add freshly grated Parmesan cheese and serve.

My Advise: Add your favorite protein, especially if that protein is pancetta.
