Carbone Spicy Vodka Sauce
Ingredients
1 small onion diced
3 cloves garlic diced
1 red chili halved or half tablespoon of red chili flakes (I leave this out when cooking for the kid and add red pepper flakes to my own bowl.)
3 tablespoons butter
5/8 cup tomato paste
1 1/14 cup heavy cream
1 tablespoon butter
2 large shots vodka
4-5 leaves fresh basil
A handful of freshly grated Parmesan
1lb pasta , they use large shell bows but I don’t have any on hand today. Any pasta will work.
Directions
Melt 2 tablespoons of butter in large frying pan
Sauté the onion till soft 3-4 minutes (salt through the onions)
Add garlic and chili pepper or chili flakes sauté another 1-2 minutes
Add the tomato paste and cook for another 2-3 minutes till you get brown bits. This part is important!
Add the basil
Take off the heat and add the vodka to deglaze (be careful if using gas stove, it could flare up
Put back on heat and cook till vodka almost evaporated
Add the heavy cream and stir. Will be a bright orange color.
Throw pasta in salted boiling water and cook till al dente reserving a cup of salted pasta water.
Add pasta and a little bit of pasta water and stir
Half the last tablespoon of butter and mix to combine
Sprinkle with fresh grated Parmesan
Serve!
