Feel Good Chicken Soup
Ingredients
1 onion finely diced
4 carrots diced
4 celery stalks diced
1/2 inch fresh finder grated
1/2 inch fresh turmeric grated
4 cloves garlic grated
1.5 lb chicken breast
8-12 cups chicken broth
1 tsp dried basil
1/3 cup low sodium soy sauce (optional)
Salt and pepper to taste
Directions
Sauté onion for 3-5 minutes till soft in EVOO and salt through.
Add carrots celery cook for another 5 minutes
Grate the ginger, turmeric, garlic right in the pot (or add it if grated already)
Cook for another 2 minutes
Add chicken broth. Start with 8 cups. Bring to a boil and add chicken cook for 20 minutes or till cooked through remove once cooked and set aside, let cook, shred /dice and add back in.
Add soy sauce
Let cook for another 30 minutes or till vegetables are soft.
Add salt and pepper to taste. You may not need salt if you have added the soy sauce.
I love to eat this with rice noodles. Ramen and rice are great options also!
It makes a lot! Keep whatever fits in a large Tupperware on your fridge and freeze the rest! (Just the soup, not the noodles)
