Seafood Stew
Ingredients:
3 Dozen little neck clams
1 1/2 lbs Scallops
1 1/2 lbs Shrimp
8 Cloves Garlic – minced
1 Onion – diced
3 Chorizo Links – sliced
1 Cup Water
3 Tomatoes – diced
3 Bay Leaves
1/2 Bottle Dry White Wine – (I prefer Pino Grigio)
1/2 cup Fresh Parsley – roughly chopped
Salt and Pepper to taste
Prep – make sure you dry your scallops well. Leave them out on 1-2 layers of paper towels for 20-25 minutes. Then dry each scallop gently with paper towels. Scallops retain a lot of water and if you do not dry them out, they will not cook properly.
Directions
In a large heavy pot, sauté salted onion in olive oil for approx. 2 minutes
Add Garlic and sauté till fragrant.
Add chorizo, tomatoes, wine, bay leaf, 1/4 cup parsley,salt and pepper. Bring to a boil and then lower to a simmer for 8-10 minutes.
Add the clams, mix well and cover for about 5 minutes.
Add shrimp and scallops and cook an additional 2-3minutes, until seafood is completely cooked.
Ladle into bowls and top with a little fresh parsley.
My Advice:
Make this with my delicious Garlic Bread Recipe or serve over rice. Both will soak up the juices of this amazing meal and pack a real punch to each bite!
